Ingredients:

  • 2-3 tbsp olive oil 
  • 2 tbsp tomato paste 
  • 3 whole tomatoes chopped 
  • 1 onion finely diced 
  • 1 red bell pepper finely diced 
  • 3-4 garlic cloves 
  • ¾ cup of water (adjust more or less depending)
  • Salt and pepper to taste 
  • ½ tsp cumin 
  • 1 tsp paprika
  • 1 tsp chilli powder 
  • 1 tsp sugar 
  • 4-5 eggs 
  • Garnish: Chopped cilantro & Parsley 

Instructions:

  1. Saute the tomato paste in the olive oil in a large pan over medium heat for two minutes and add the garlic.
  2. Add the tomatoes, onion and bell pepper and cook until softened. 
  3. Add water and all the spices. 
  4. Mix well and cook for 3 minutes.
  5. Taste and adjust accordingly.
  6. Sprinkle on the chopped cilantro and parsley 
  7. Reduce the heat to low and make 4-5 holes and crack the eggs in. 
  8. Cover the pan and let cook for around 6-8 minutes depending if you want runny or hard yolks. 
  9. Serve warm and enjoy!
