Pineapple curry is a creamy and tangy vegetarian curry that pairs amazingly with a side of rice. It is the perfect dish to make if you have some left over pineapple laying around! Filled with spices and produce, it is an explosion of flavour in your mouth. It is quick, easy, and sure to impress your guests at the dinner table.


  • 3-4 Cups Pineapple Chunks
  • 1 Cup Milk
  • ½ Cup Pineapple Juice 
  • 1 onion diced
  • 2 Cloves Garlic minced
  • 2 Tbs Olive Oil
  • 2 Tbs Curry Powder
  • 1 Tbs all-purpose flour
  • 2 Tsp ground cumin
  • 1 Tsp Turmeric
  • 1 Tsp Black Pepper
  • 1 Tsp Paprika
  • Salt to taste
  • Optional: add any extra veggies you like!


  1. Heat olive oil in a pan over medium heat.
  2. Sauté the onion, garlic, and pineapples until the onions are translucent, about 3–5 minutes.
  3. Add spices to the pan and continue to cook and stir for a minute or two.
  4. Slowly add the milk and juice while stirring. Let the mixture simmer until it starts to thicken, about 10 minutes. 
  5. Add salt to taste.
  6. Serve hot and enjoy!
