If you're craving a home cooked meal that feels like comfort, you've found the right recipe for you. This Ratatouille will have you feeling like you just got a warm hug.

 

Ingredients:

  • 1 eggplant, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced 
  • 4 cloves garlic, minced
  • 2 cups diced tomatoes 
  • 1 can of crushed tomatoes 
  • 1/4 cup olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 375 degrees.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion and garlic, and sauté until fragrant and softened.
  4. Add the bell peppers, and tomatoes and crushed tomatoes.
  5. Stir in the thyme, oregano, salt, and pepper.
  6. Cover and simmer for 30-40 minutes, stirring occasionally, until the vegetables are tender.
  7. Once the sauce has thickened, pour into an oven safe dish and layer the zucchini, eggplant, and squash in a spiral formation on top. 
  8. Brush with a bit of olive oil.
  9. Cover and bake for 30 minutes then uncover and bake until tender 
  10. Garnish with fresh basil before serving.
