If you're craving a home cooked meal that feels like comfort, you've found the right recipe for you. This Ratatouille will have you feeling like you just got a warm hug.
Ingredients:
- 1 eggplant, thinly sliced
- 1 zucchini, thinly sliced
- 1 yellow squash, thinly sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 2 cups diced tomatoes
- 1 can of crushed tomatoes
- 1/4 cup olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper
- Fresh basil for garnish
Instructions:
- Preheat the oven to 375 degrees.
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until fragrant and softened.
- Add the bell peppers, and tomatoes and crushed tomatoes.
- Stir in the thyme, oregano, salt, and pepper.
- Cover and simmer for 30-40 minutes, stirring occasionally, until the vegetables are tender.
- Once the sauce has thickened, pour into an oven safe dish and layer the zucchini, eggplant, and squash in a spiral formation on top.
- Brush with a bit of olive oil.
- Cover and bake for 30 minutes then uncover and bake until tender
- Garnish with fresh basil before serving.
